The Role of Artificial Intelligence in Nutritional Assessment: A Review

The rapidly evolving field of Artificial Intelligence has presented transformative opportunities for advancing nutritional assessment methodologies. This paper reviews the integration of AI into nutritional assessment, highlighting its capacity to analyze complex dietary data and predict individual nutrient requirements (Cosme et al., 2025). It critically examines the current state-of-the-art AI technologies, including machine learning, deep learning, and natural language processing, as applied to various facets of nutritional science (Taneja et al., 2023). Furthermore, the review explores how AI applications facilitate more precise dietary interventions and enhance the effectiveness of public health nutrition strategies by enabling the transformation of high-dimensionality data into clinically actionable knowledge (Xu et al., 2019). It also addresses the inherent challenges, such as data privacy, ethical considerations, and the need for robust validation, which are crucial for the responsible deployment of AI in nutritional contexts (Aritra & Singh, 2025). This comprehensive review systematically analyzes existing literature to bridge the gap between AI's potential and its practical implementation in nutritional assessment, thereby providing a valuable resource for researchers, practitioners, and policymakers (Agrawal et al., 2025). Finally, it offers insights into future research directions and policy recommendations to foster the responsible and effective integration of AI in nutritional science.
